Jim Cohen, owner and executive chef
Jim Cohen brings talent and passion to The Empire Restaurant. One of the original
chefs to identify regional American cuisine in the 1980s, Jim has received
accolades from both Julia Child and James Beard.
Jim's long history in Colorado includes creating the Plum Tree Café and
Tante Louise in Denver. Both restaurants had regional menus featuring "New
American Cuisine." Cohen's work as Tante Louise's chef
caught Julia Child's attention and led her to name him one of
the U.S.'s top chefs in 1983, and then feature him on her first "Dining
with Julia" television program. The James Beard Foundation nominated
Jim for "Best Chef in the Southwest" in 1991.
A Culinary Institute of America graduate, Jim Cohen creates success wherever
he unpacks his knives. He opened the award winning Wildflower Restaurant
at The Lodge at Vail, as well as Cucina Rustica, another Vail favorite.
He also spent time as executive chef at The Phoenician in Scottsdale,
Arizona as well as Terrazza at Caesars Palace, Las Vegas.
"Regional cuisine celebrates the unique spirit of a place, we buy from
local farmers whenever possible," Jim says. "I love to use local
ingredients and simple flavors to create great, comfortable dining. Here at
Empire, our goal is to take the art of casual dining to the next level.
We love Louisville and want this to be a place where the Louisville and
Boulder County community can feel at home. A place where guests can eat
down-home or uptown - at the same meal if they want!"
